I bought a huge pack of tomatoes from Costco. The funny thing is I don't really like tomatoes, something about firm and mush in one fruit. But they were so perfect and red and I figured I could do *something* with them.
I learned that the packaging they came in with plastic film and some holes really extended the life, so I went on Amazon and bought these. Hopefully they help keep my fruits and veggies fresher longer otherwise I feel like my fridge is just pallative care for healthy food.
I found a recipe for stewed tomatoes from Brooklyn Farm girl but as per usual, I modified it. So here is my version below:
Ingredients
- 10 tomatoes on the vine
- 2 teaspoons salt
- 1/2 teaspoon sugar
- 1 teaspoon dried oregano
- 1/2 cup chopped yellow pepper
- 1/2 yellow onion
- 1 tbsp chopped ginger
- Pepper to taste
Instructions

Bring a large pot of water to boil, plunge tomatoes in for 2 minutes. Remove, put immediately in some cold water.

Peel the tomatoes. Discard the skins.

Dice the tomatoes up to desired size.

In a large pot on medium heat, combine all ingredients cept tomatoes and put on saute. Once onions are ready, throw in the tomatoes.

I used the Bean/Chili setting for 20 minutes.

Then I threw in 3 chicken breasts (frozen) 2 large, one small and put on pressure cooker for 20 minutes
The output was a lot more soupy than I expected so I shredded the chicken and voila, meals for days. I'm going to freeze the rest.
